Spent the day reading and cooking and occasionally internetting. Have you heard about this internet thing? It's all the rage.
Dinner was, what's the word... FABULOUS. First was a bacon-balsamic wilted spinach salad (with mandarin orange slices and walnuts tossed in, because I wanted to). Very easy to make. Fry up a couple slices of bacon (set 'em aside to drain), sweat a half a red onion in the bacon grease, add a little bit of sugar (like teaspoon, perhaps), a little salt and pepper, and a couple tablespoons of balsmic vinegar. Pour it over a bowl of baby spinach with bacon bits (and some mandaring orange slices and walnuts, if you choose), toss, and eat.
And then there was dinner; Bacon and Blue Cheese Stuffed Mushrooms.

Lindeman's Shiraz, which I though would go nicely with the bold flavor of the mushrooms. That and I don't like white wine as much as red. The only thing that was missing, the thing that's always missing, was someone special to eat it with. Still, though, it beats a kick in the balls.
